应用蛋白质含量不同的品种研究了氮肥与小麦籽粒面筋含量及品质的关系。结果表明,试验条件下,亩施纯氮17.5kg以下,籽粒面筋含量随氮肥用量的增加而增加;超过17.5kg,面粉面筋含量下降。籽粒赖氦酸百分含量在施氮量超过10kg以后,呈下降趋势。不同处理沉淀值以施用10kg纯氮处理最高,施氮量超过10kg,沉淀值下降。醇溶蛋白含量随施氮量增加而增加。麦谷蛋白在施氮10kg以内,随施氮量增加而增加,超过10kg,麦谷蛋白含量下降。盐溶蛋白随施氮量增加而呈下降趋势。
The relationship between nitrogen fertilizer and grain gluten content and quality of wheat was studied by using different varieties with different protein content. The results showed that, under the test conditions, the Mushi nitrogen below 17.5kg, grain gluten content increased with the increase of nitrogen fertilizer dosage; more than 17.5kg, flour gluten content decreased. The content of NAA in grains decreased after nitrogen application rate exceeded 10 kg. Different treatment sedimentation value to the highest treatment of 10kg pure nitrogen treatment, nitrogen application rate of more than 10kg, sedimentation value decreased. The content of gliadin increased with the increase of nitrogen application rate. The content of glutenin increased with the increase of nitrogen application rate when the amount of nitrogen applied was less than 10kg. When the content of glutenin increased more than 10kg, the content of glutenin decreased. Salt-soluble protein showed a decreasing trend with the increase of nitrogen application rate.
