扫描电镜观察表明:水稻籼型品种胚乳淀粉粒一般呈多面体,有腹白和心白部位的淀粉粒多面体的棱角不明显,个别粒近圆形。一般直径在3.3-9.3μm。普通野生稻和栽培稻籼型品种胚乳淀粉粒形状相似,但粒小于籼稻,晚籼品种淀粉粒大于早籼。商品价值高的品种淀粉粒的形状呈多面体而结构密致。因而,借助于对品种胚乳淀粉粒的观察,可初步鉴别米质的优劣。
Scanning electron microscopy observations showed that the endosperm starch grains of rice indica varieties were generally polyhedron, and the angular grains of starch grains with ascites and heart white parts were not obvious, and individual grains were nearly circular. The general diameter of 3.3-9.3μm. The starch grains of endosperm of common and cultivated indica cultivars were similar in shape, but grains were smaller than those of indica rice and starch grains of late indica rice were larger than those of early indica rice. The high value of varieties of starch granules in the shape of a polyhedron and dense structure. Therefore, by means of the observation of varieties of endosperm starch grains, the quality of rice can be initially identified.
