藠头(Allium chinensis)又名薤、藠子、荞头,系百合科葱属草本植物,原产东亚。其嫩叶炒食香粘可口,鳞茎腌渍脆嫩香甜,风味独特。尤其是经高温灭菌、贮藏加工后依然松脆宜人,为其他蔬菜所不能比。藠头富含抗坏血酸,硫胺素及硫化丙烯物,具有健身养生之功效。《本草纲目》载有“薤白,味辛,除寒热、去水气,温中解结气”等药效。此外,藠头还是酒席宴筵上不可缺少的佐餐佳品,唐代诗人白居易曾赞曰“酥暖薤白酒”,足见其为理想的佐餐保健佳品。
