目的探讨农村居民膳食营养状况及存在的营养问题。方法采用食物频率问卷方法进行调查。摄入食物中营养素含量的计算参照中国疾病预防与控制中心营养与食品卫生研究所的《食物成分表》。结果平均每人每日摄食物为1 482~1 492g,其中蔬菜、水果摄取食量超过中国居民膳食指南建议数值,鱼、肉及奶制品摄入偏低;女性在营养摄入量方面低于男性。结论农村居民热能、蛋白质摄入量基本满足要求,但总体营养水平偏低,食物摄入不平衡使营养过剩和营养不良并存。
Objective To investigate the nutritional status of rural residents and their nutrition. Methods The food frequency questionnaire was used to investigate. The calculation of nutrient content in food intake refers to the “Food Ingredient List” of the Institute of Nutrition and Food Hygiene, China Center for Disease Control and Prevention. Results The average food intake per person per day was 1 482-1 492g, of which the intake of vegetables and fruits exceeded the recommended values of dietary guidelines of Chinese residents, while the intake of fish, meat and dairy products was low. Women had lower nutritional intake than men . Conclusion The heat energy and protein intake of rural residents basically meet the requirements, but the overall nutritional level is low, and the unbalanced food intake coexists with excess nutrients and malnutrition.
