目的了解邯郸市2014-2015年餐饮业及学校食堂餐饮具消毒情况,预防食源性疾病发生。方法使用餐饮具大肠菌群快速检验纸片对市内所辖1 000 m2以上餐饮业及学校食堂餐饮具进行检测。结果餐饮具消毒合格率2014年为65.07%(885/1 360),2015年为79.03%(1 142/1 445),差异有统计学意义χ2=11.01,P<0.01);洗碗机消毒合格率最高,为98.02%(235/240);存放于保洁柜中的餐饮具合格率为81.07%(1 542/1 902),高于敞露橱柜的合格率51.94%(469/903),差异有统计学意义(χ2=45.24,P<0.01);学校食堂合格率为84.06%(786/935),高于餐饮业的68.98%(1 290/1 870),差异有统计学意义(χ2=10.72,P<0.01)。结论在今后的监督重点中,应严格餐饮具的消毒保洁制度,确保餐饮具消毒效果。
Objective To understand the disinfection situation of catering equipment in the catering industry and school canteens in Handan City from 2014 to 2015 so as to prevent the occurrence of foodborne diseases. Methods The use of tableware coliform rapid test paper over the city under the jurisdiction of more than 1 000 m2 catering industry and school canteens dining utensils for testing. Results Tableware disinfection pass rate in 2014 was 65.07% (885/1 360) in 2015 was 79.03% (1 142/1 445), the difference was statistically significant χ2 = 11.01, P <0.01); dishwasher disinfection qualified The highest rate was 98.02% (235/240). The passing rate of tableware stored in the cleaning cabinets was 81.07% (1 542/1 902), which was 51.94% (469/903) higher than the open cupboards. The difference was (Χ2 = 45.24, P <0.01). The pass rate of school canteens was 84.06% (786/935), which was higher than 68.98% (1 290/1 870) of the catering industry with a significant difference (χ2 = 10.72, P <0.01). Conclusion In the future supervision of the key, should be strict disinfection of food and beverage cleaning system to ensure that the tableware disinfection.
