鹌鹑,古称鹑鸟、宛鹑,为雉科动物,是一种古老的食用禽。早在我国春秋战国时期,鹌鹑肉蛋就已作为名贵的佳肴出现在宫宴之上。据《拾遗记》记载,战国时的上大夫宋景山喜食“桂髓鹌鹑汤”。此后,历代宫中御膳均有鹌鹑。至今,用鹌鹑烹制的各种菜肴,仍然受到人们欢迎。
Quail, the ancient name of quail birds, Wan Qu, for the Phasianidae, is an ancient edible birds.
