目的了解铁路餐车食品从业人员对食品安全的知识、态度、行为(KAP)现状,为在从业人员中开展食品安全教育培训提供科学依据。方法 2015年3~6月用自制KAP调查问卷,对某铁路局524名餐车服务员进行问卷调查。用SPSS 13.0统计软件进行数据处理和分析。结果该食品从业人员食品安全知识总体得分为(8.49±1.67)分,合格率为96.56%(505/523),良好率为63.29%(331/523),安全行为总体形成率为91.20%(477人);不同文化程度、年龄、岗龄和岗位的从业人员食品安全知识得分不同(P<0.01),不同文化程度、年龄和岗龄的从业人员食品安全行为率不同(P<0.05)。食品从业人员的食品安全知识主要来自专业培训(459人、87.76%)和现场督促指导(326人、62.33%)。结论铁路餐车食品从业人员具有一定食品安全认知,但仍存在不足。
Objective To understand the knowledge, attitude and behavior (KAP) of food truck operators on food safety and to provide a scientific basis for carrying out food safety education and training among employees. Methods From March to June 2015, a questionnaire was made by using self-made KAP questionnaire to 524 car attendants in a railway bureau. Using SPSS 13.0 statistical software for data processing and analysis. Results The overall score of food safety knowledge of food practitioners was (8.49 ± 1.67) points, the pass rate was 96.56% (505/523), the good rate was 63.29% (331/523), and the overall rate of safety behavior was 91.20% (477 (P <0.01). The food safety behaviors of practitioners with different educational level, age and post-employment age were different (P <0.05). Food safety knowledge of food practitioners mainly comes from professional training (459 persons, 87.76%) and on-site supervision and guidance (326 persons, 62.33%). Conclusion There are some food safety cognitions for railway diners, but there are still some shortcomings.
