目的了解玉林市餐饮业餐具的卫生状况,为制定有效的监督管理措施提供科学依据。方法采用纸片法对玉林市不同类型餐具进行抽样检验和综合分析。结果 2006—2009年餐饮业总合格率为67.48%,各年份的合格率分别为53.05%、72.18%、73.22%、74.94%,大、中、小型餐饮业合格率分别为87.50%、68.75%、56.98%;不同种类餐具监测合格率以杯、碟较高,分别为76.91%、76.18%;不同季节餐具合格率以夏、秋季节合格率偏低;餐具集中消毒优于自行消毒,5组数据差异均有统计学意义(P<0.01)。结论玉林市餐饮业的卫生状况虽然逐年趋好,但仍应加强卫生管理工作,进一步提高餐饮业卫生质量,保护消费者的合法权益和身体健康。
Objective To understand the sanitary status of tableware in Yulin catering industry and provide a scientific basis for formulating effective supervision and management measures. Methods The paper method was used to test and analyze the different types of utensils in Yulin City. Results The total qualification rate of catering industry in 2006-2009 was 67.48%, the pass rates in each year were 53.05%, 72.18%, 73.22% and 74.94% respectively. The pass rates of large, medium and small restaurants were 87.50% and 68.75% respectively, 56.98%; different types of tableware monitoring pass rate cup, dish higher, respectively, 76.91%, 76.18%; tableware pass rate in different seasons in summer and autumn the pass rate is low; tableware disinfection is better than self-disinfection, 5 sets of data The differences were statistically significant (P <0.01). Conclusion Although the health status of catering industry in Yulin City is getting better year by year, health management should be strengthened to further improve the health quality in the catering industry and protect the legitimate rights and interests of consumers and their health.
