湘菜产于鱼米之乡的湖南,始于春秋战国时期,发展至今已种类繁多,数以千计。特别是清末以来,由于辣椒引进湖南,找到了用武之地,很快遍及三湘,使湘菜锦上添花,更加多姿多彩,更加风味独特。目前,据有关部门统计,湖南成了辣菜品种已发展到800多个,真是万紫千红总是辣。这种辣味的增添使湘菜更趋完美,更是异军突起,加速成为了中国菜系风味的一大流派和主流美食,不仅已飘香大江南北,而且倾倒欧美,阔步走向世界。由此可见,在湖南这个辣椒王国里,是辣椒铸成了湘菜的灵魂。由于辣椒的神奇功能,“辣”出了湘菜的风姿,带来了生意的火爆;“辣”出了一方经济,致富了千万人家;“辣”出了无数英雄豪杰,挑起了国家重担;“辣”出了一块饮食文化园地,使辣椒的诗词歌赋书画杂志应有尽有,百花齐放。
Hunan Hunan produced in the land of fish and rice, began in the Spring and Autumn Period, the development has so far a wide range of thousands. Especially since the end of the Qing Dynasty, because of the introduction of peppers in Hunan, we found a place to be used, and quickly spread throughout Hunan Province to make icing on the cake, making it more colorful and distinctive. At present, according to the statistics of relevant departments, Hunan has become more than 800 varieties of spicy vegetables, which are always colorful. This spicy increase make Hunan more perfect, but also a sudden emergence, accelerated to become a major genre of Chinese cuisine and the mainstream cuisine, not only has been drifting north and south, but also dumping Europe and the United States, striding toward the world. This shows that in Hunan, the pepper kingdom, pepper is cast into the soul of Hunan. Because of the magical function of pepper, “spicy” out of Hunan’s grace, has brought the business hot; “spicy” out of one economy, rich millions of people; “spicy” out of countless heroes, provoked the national burden ; “Spicy” out of a piece of food culture garden, so that pepper poetry and calligraphy and painting magazine everything, flowers bloom.
