目的了解邢台市桥东区餐饮单位餐具的卫生状况和消毒状况,以保障消费者的身体健康。方法按《食(饮)具消毒卫生标准》(GB 14934-1994)测定大肠菌群,并进行统计分析。结果大中型餐饮单位餐饮具消毒合格率(92.2%)优于小型餐饮单位餐饮具合格率(86.5%),两者差异有统计学意义(P<0.01);冬春季节餐饮具合格率(92.1%)优于夏秋季节餐饮具合格率(87.3%),两者差异有统计学意义(P<0.01);B级餐饮单位餐饮具消毒合格率(95.0%)明显优于C级餐饮单位餐饮具消毒合格率(86.4%),两者差异有统计学意义(P<0.01)。结论该区餐饮单位餐具消毒质量仍存在一定问题,应进一步加强对餐饮服务业卫生状况的监督管理,定期抽样检测,进一步提高饮食服务业的卫生状况,确保消费者的饮食安全。
Objective To understand the hygiene status and disinfection status of dining tableware in Qiaodong District of Xingtai City in order to protect consumers’ health. Methods According to “food (drinking) with disinfection health standards” (GB 14934-1994) coliform bacteria, and statistical analysis. Results The passing rate of tableware of large and medium-sized catering units was 92.2% better than the tableware of small-sized catering units (86.5%), the difference was statistically significant (P <0.01). The passing rate of catering tableware in winter and spring was 92.1% %) Was better than that of the summer and autumn dining tableware (87.3%), the difference was statistically significant (P <0.01). The passing rate of the tableware of the B-class restaurant was 95.0% Disinfection pass rate (86.4%), the difference was statistically significant (P <0.01). Conclusion There are still some problems in the quality of tableware disinfection of catering units in this area. We should further strengthen the supervision and management of the sanitary conditions in the catering service industry, and regularly sample and test the health status of catering service industry to ensure the safety of consumers.
