目的了解锡林浩特市餐饮服务单位餐具消毒卫生状况,探讨其影响因素,提出相应改进建议。方法采用大肠菌群检验纸片法,对锡林浩特市餐饮单位餐具消毒效果进行采样检测。结果 3年内共采样2 996份,合格1 880份,总体合格率为62.75%,2012-2014年合格率分别为58.93%、62.82%和65.61%。餐饮具合格率呈逐年上升的趋势,不同年度差异有统计学意义(P<0.05);大型餐饮单位合格率(65.64%)显著高于中小型餐馆(60.41%),P<0.01;筷子等其他餐具合格率(75.20%)显著高于碗(58.38%)和碟(62.37%),P<0.01。结论锡林浩特市餐饮业餐饮具合格率较低,应加强餐饮业餐具消毒监管力度,采取综合措施进一步提高餐饮具消毒卫生质量。
Objective To understand the status of disinfection and hygiene of tableware in catering service units of Xilinhaote City, discuss its influencing factors and put forward corresponding suggestions for improvement. Methods Coliform bacteria test paper method was used to sample and test the disinfection effect of dining tableware in Xilinhot City. Results A total of 2 996 samples were obtained over the 3 years, with a total of 1 880 samples. The overall pass rate was 62.75%. The pass rates in 2012 and 2014 were 58.93%, 62.82% and 65.61% respectively. The passing rate of tableware increased year by year with statistical significance in different years (P <0.05). The passing rate of large catering units (65.64%) was significantly higher than that of small and medium-sized restaurants (60.41%), P <0.01; chopsticks and others Tableware passing rate (75.20%) was significantly higher than the bowl (58.38%) and dish (62.37%), P <0.01. Conclusion Xilinhot Catering Industry has a low pass rate, should strengthen the catering industry supervision and management of tableware disinfection, take comprehensive measures to further improve the quality of tableware disinfection and health.
