香椿芽营养丰富,质嫩,香气浓郁,味美,是我国人民喜食的高档蔬菜。传统的栽培多是零星种植,管理粗放,且多为林用种植方式。近几年来,随着蔬菜生产的发展,特别是保护地栽培的发展,香椿作为菜用栽培的种植面积不断扩大。香椿芽的采收期集中,供应期短。进行贮藏保鲜,可延长其供应期,解决生产的季节性与周年供应的矛盾。但因香椿芽为叶菜,在常温下贮藏,易发生落叶、腐烂,降低食用价值等问题,目前普遍应用的盐渍法贮存,虽然解决了长期供应的问题,但对风味和营养的损失较大,起不到保鲜的效果。以下结合作者开展香椿贮藏保鲜技术的研究结果,简要叙述其短期和长期保鲜技术。
