菜豆是我国人民喜爱的蔬菜品种之一。由于受生产季节的影响,北京夏秋两季菜豆上市数量大,供大于求,往往造成大量菜豆腐烂变质,而且受到贮藏期的限制,冬春淡季菜豆上市量很少,造成供求矛盾的突出。为解决这个矛盾,北京地区最近已试制进行菜豆的速冻加工。速冻菜豆即可缓和首都市场淡季蔬菜供应紧张的局面,丰富市民的物质生活水平,而且为达到蔬菜的周年均衡供应起到了一定的积极作用。速冻菜豆的加工方法工艺流程:原料挑选加工→清洗→烫漂
