目的了解镇江市学校食堂食品安全状况,为实施科学有效监管提供对策。方法对辖区内87家学校食堂进行现场调查。结果约1/4的食堂备餐间不符合要求,餐用具保洁设施数量不足,未定期开展培训;约1/6的学校食堂布局不合理,食品处理区面积不足,食品贮存不规范,索证索票不齐全;约1/7的食堂餐厅面积不足,食品留样不规范;约1/8的食堂“三防”设施不足,约1/9的食堂初加工环节荤素不分。结论镇江市学生食堂食品安全管理水平不均衡,在布局流程、硬件设施配置方面存在不足,自身管理方面存在漏洞,应进一步加强监管,完善资金投入和政策保障机制。
Objective To understand the food safety status of school canteens in Zhenjiang and provide countermeasures for implementing scientific and effective supervision. Methods A total of 87 school canteens in the area were surveyed on site. The results of about 1/4 of the canteen preparation room does not meet the requirements, lack of food utensils cleaning facilities, not regular training; about 1/6 of the school canteen layout is not reasonable, inadequate food processing area, food storage is not standardized, Tickets are not complete; about 1/7 of the canteen restaurant area is inadequate, food samples are not standardized; about 1/8 of the canteen “three defenses ” lack of facilities, about 1/9 of the canteen initial processing links meat and vegetables regardless. Conclusion The level of food safety management in student canteens in Zhenjiang is not balanced. There are deficiencies in the layout process and hardware facilities allocation. There are loopholes in its own management. Supervision and improvement of capital input and policy support mechanisms should be further strengthened.
