柿果充分成熟后仍有强烈收敛性涩味,不堪入口。现将我县民间通用的辣蓼脱涩法简介如后。①采果:一般在10月上中旬果实变黄而肉质脆硬约八成熟时采收,注意选晴天采果並避免伤果;③备蓼:辣蓼俗称火蓼子,是一种蓼科杂草,无毒。割取其地上部分,去掉枯黄叶后用清水洗净晾干备用;③装罐:脱涩罐用烧制的土砂塘罐,要求不漏气,大小以装20—30斤为宜。先将罐及果实洗净晾干,罐底铺一层2—3cm辣蓼,装罐时果梗向下成“品”字
