目的了解江门市区2004-2011年食品中沙门菌、金黄色葡萄球菌、单增李斯特菌(Lm)、副溶血性弧菌及大肠杆菌(EHEC)O157∶H7的污染状况,确定可能污染上述致病菌的高危食品,为食源性疾病监测工作提供科学依据。方法依据国标方法,按《广东省食源性致病菌监测计划》检测技术要求,对采集的食品样本分别进行沙门菌、金黄色葡萄球菌、Lm、副溶血性弧菌及EHEC O157∶H7菌分离和生化及血清学鉴定,对结果作统计分析。结果 12类1 237份食品中共检出致病菌98株,总检出阳性率为7.92%。其中金黄色葡萄球菌检出23株,检出率为4.14%(23/556);其次沙门菌检出34株,检出率为2.75%(34/1 237);Lm检出30株,检出率为2.43%(30/1 237);副溶血性弧菌检出11株,检出率为2.14%(11/513);未检出大肠杆菌O157∶H7。以非定型包装熟肉、生禽肉、水产品和凉拌菜污染较为严重。结论应加强非定型包装熟肉、生禽肉、水产品和凉拌菜食品食源性致病菌污染的监测。
Objective To understand the contamination status of Salmonella, Staphylococcus aureus, Listeria monocytogenes (Lm), Vibrio parahaemolyticus and EHEC O157: H7 in food in Jiangmen City from 2004 to 2011, Pathogenic bacteria of high-risk food for foodborne disease monitoring to provide a scientific basis. Methods According to the national standard method, according to the technical requirements of “Foodborne Pathogenic Bacteria Monitoring Program of Guangdong Province”, the collected food samples were tested for Salmonella, Staphylococcus aureus, Lm, Vibrio parahaemolyticus and EHEC O157: H7 Separation and biochemical and serological identification, the results for statistical analysis. Results A total of 98 strains of pathogenic bacteria were detected in 12 kinds of 1 237 foodstuffs, the total positive rate was 7.92%. Among them, 23 were detected by Staphylococcus aureus, with a detection rate of 4.14% (23/556); followed by 34 strains with Salmonella detected, with a detection rate of 2.75% (34/1 237); 30 strains were detected by Lm Out rate was 2.43% (30/1 237); 11 strains of Vibrio parahaemolyticus were detected, the detection rate was 2.14% (11/513); E. coli O157: H7 was not detected. Non-stereotypes packaged cooked meat, raw poultry, aquatic products and salad more polluting. Conclusion The monitoring of contamination of food-borne pathogens in cooked meat, raw poultry meat, aquatic products and cold-pickled vegetables should be strengthened.
