海英菜学名碱蓬,俗称盐蒿子,广泛生长于苏北沿海滩涂的盐碱地上,从古时到近代,一直是苏北盐民在饥荒年代耐以求生的“救命草”。近年来,随着生活条件的改善,人们日趋重视绿色食品,讲究保健功能,海英菜逐渐成为家乡人民招待外地客人的一道有名气的健康菜肴。基于此,从海英菜的植物性、功能性、观赏性等方面着手对其开发利用进行探讨。
