武夷山产茶,历史悠久,约有千余年,经历“三起三落”。制茶技术不断改进,茶类不断更新。由蒸青团茶发展到蒸青散茶,由蒸青散茶发展到炒肖绿茶,由炒青绿茶发展到小种红茶,由小种红茶发展到青茶。这都是按量变到质变的规律顺序转化的,是茶业史的发展。武夷茶名依制茶技术的发展而不同。不能凭想像而张冠李戴,指鹿为马。这些对人类有大贡献的成绩,是历代无数劳动人民心血的结晶,应该歌功颂德,不能曲解史实。我们发表这篇史考,就是要澄清对武夷茶名的误解。建国后,在“三落”的尾声,大力恢复、发展、研究,大有“四起”的趋势,容后专文论述。
