目的评估餐饮具集中消毒单位监管效果,为提高该行业卫生管理水平提供参考。方法对2011-2013年上海某区餐饮具集中消毒单位监督检查和监测结果进行回顾性分析,评估监管效果。结果上海某区餐饮具集中消毒行业状况有明显改善,生产面积小于200m2的单位均已退出市场,单位生产能力逐年增加,行业卫生管理水平和消毒餐饮具合格率不断提高,开展的卫生监管措施初显成效;在更衣室内设置洗手及消毒设施设置、生产设备配置、包装标签、工作人员手和操作台面消毒卫生方面仍存在较多问题。结论加强部门联动管理,推动行业内部管理自律,探索卫生安全可追溯管理模式,继续加大新地方标准的宣贯和执行力度。
Objective To evaluate the supervision effect of concentrated disinfection units of tableware and provide references for improving the level of hygiene management in this industry. Methods A retrospective analysis was conducted on the results of supervision and inspection of centralized disinfection units of tableware in Shanghai in 2011-2013 to evaluate the regulatory effect. Results In a certain area of Shanghai, the situation of centralized disinfection of tableware wares improved markedly. Units with a production area of less than 200m2 have already withdrawn from the market. The unit production capacity has been increasing year by year. The sanitary management level of the industry and the passing rate of disinfected tableware continue to improve. Significant effect; in the locker room to set up washing and disinfection facilities, production equipment configuration, packaging labels, staff hand and countertops disinfection of health there are still many problems. Conclusion Intensify linkage management of departments, promote self-discipline of the internal management of the industry, explore traceable management mode of health and safety, and continue to intensify publicizing and implementing new local standards.
