目的了解淮安地区高校学生的早餐行为,为开展营养宣传干预提供依据。方法采用问卷法,对淮安地区4所高校3584名学生的早餐行为进行调查,并对结果进行统计和分析。结果有77.3%的男生和93.2%的女生正常食用早餐,男、女生的就餐率和早餐来源差异均有统计学意义;不吃早餐的主要原因是没有时间和没有食欲;有33.1%~33.5%的学生认为早餐很重要,1.2%~1.7%的学生认为早餐不重要,男、女生差异无统计学意义;有85.5%的学生不吃早餐会有不同程度的生理反应;学生早餐结构以米、面制品为主,肉类、蔬菜、水果较少;学生喜欢的早餐口味以咸、甜、辣为主,喜欢的早餐食物集中在牛奶、面包、粥、鸡蛋、包子、饼、豆浆等几个品种上;75.7%的学生能接受的早餐价格为1.0~2.5元。结论学生早餐就餐的随意性强,就餐率不高,食物结构不合理。需加强营养知识的宣传教育,开发合理的早餐品种,提高早餐质量,逐步改善学生的饮食行为。
Objective To understand the breakfast behavior of college students in Huaian area and provide the basis for intervention in nutrition promotion. Methods Questionnaire method was used to investigate the breakfast behavior of 3584 students from 4 universities in Huai’an. The results were statistically analyzed. Results There were 77.3% of boys and 93.2% of girls normal eating breakfast, boys and girls dining and breakfast sources were statistically significant differences; eat breakfast is mainly due to lack of time and no appetite; 33.1% to 33.5% Of students think that breakfast is very important, 1.2% ~ 1.7% of students think breakfast is not important, there is no significant difference between male and female; 85.5% of students do not eat breakfast will have different degrees of physiological response; students breakfast structure in meters, Mainly noodles, meat, vegetables, fruits less; students like breakfast taste salty, sweet, spicy-based, like breakfast food concentrated in milk, bread, porridge, eggs, buns, cakes, soy milk and a few Variety; 75.7% of students can accept the breakfast price of 1.0 to 2.5 yuan. Conclusion Students eat breakfast random, dining rate is not high, the food structure is not reasonable. It is necessary to step up publicity and education on nutrition knowledge, develop reasonable breakfast varieties, improve breakfast quality and gradually improve students’ eating behaviors.
