后发酵技术是蘑菇栽培业的一项改革。我国自1978年开始采用,目前已普遍推广应用,且取得显著的增产效果。我国所采用的后发酵工艺温度控制一般分为三个阶段:升温阶段(60-63℃,2~4小时);降温阶段和保温阶段(52℃维持3-4天)。往往我们在后发酵中只强调要达到60℃以上的高温进行巴氏灭菌,但60℃以上的高温对堆肥产生的副作用却没有引起人们的注意。后发酵中高温的副作用在国外已引起重视,Ross(1976)和P.J.Harris(1981)都曾著文讨论了高温对堆肥的不良影响,而目前我国在
Post-fermentation technology is a reform of the mushroom cultivation industry.
