乳制品安全是我国近年来食品安全的焦点,检测新技术运用滞后,部分标准缺乏,是乳制品安全事件屡禁不绝的原因之一。本文对乳制品中各种污染源及检测技术进行分析和总结,重点介绍色谱、分析化学、免疫学、分子生物学、环介导等温扩增、生物芯片等技术,并通过比较分析各种技术的优缺点,对乳制品未来检测技术进行综合分析,以期为快速、准确地检测乳品中有害成分及检测技术的发展提供一定的参考。
The safety of dairy products is the focus of food safety in recent years in our country.
