为了解池养拉氏鱥肌肉营养特征,对其营养价值进行评价。用常规营养测定方法测定了池养拉氏鱥Phoxinus lagowskii Dybowskii(体质量45.34±12.69g)含肉率及营养成分。拉氏鱥含肉率为(74.26±0.31)%;肌肉(鲜样)中水分含量为(76.46±0.34)%、粗蛋白质含量为(17.88±0.63)%、粗脂肪含量为(3.95±0.05)%、灰分含量为(1.43±005)%;肌肉中18种必需氨基酸总量14.17%(鲜计),其中8种人体必需氨基酸含量为5.90%,占氨基酸总量的41.64%;肌肉中必需氨基酸构成符合FAO/WHO标准;限制性氨基酸为色氨酸、缬氨酸、蛋氨酸+胱氨酸,必需氨基酸指数(鸡蛋)为63.86,4种鲜味氨基酸含量为5.19%(鲜计),占氨基酸总量的36.62%。池养拉氏鱥含肉率、粗蛋白、粗脂肪含量高,蛋白质中人体必需氨基酸和鲜味氨基酸含量丰富,肌肉品质好,是营养价值较高的经济鱼类。
In order to understand the nutritional characteristics of Pondus laevis, its nutritional value was evaluated. The amino acid composition of the essential amino acids is tryptophan, valine and methionine + cystine, the essential amino acid index (egg) is 63.86, and the content of amino acids in the four kinds of umami is 5.19% (fresh), accounting for amino acids 36.62% of the total. Pond Raji 鱥 meat content, crude protein, crude fat content, protein essential amino acids and umami amino acids rich in content, good muscle quality, is a high nutritional value of economic fish.
