体外模拟人体结肠的pH和微生物环境,研究麦麸经过结肠后微粒的大小和电荷密度以及形状。以麦麸为唯一碳源,接种结肠微生物混合液厌氧培养24h。采用Zeta电位仪和原子力显微镜分别对发酵上清液中的颗粒进行研究。结果表明,酵解后发酵上清液中微粒呈球形,平均粒径为570.2nm,微粒主要集中在3个范围:63.35~119.22、262.79~494.57nm以及1276.86~2814.55nm,ζ(zeta)电位为(-10.72±2.94)mV。
In vitro simulations of human colon pH and microbial environment, wheat bran through the colon after the size of the particle size and charge density and shape. With wheat bran as the sole source of carbon, the colon bacillus mixture was inoculated anaerobically for 24 h. Zeta potential and atomic force microscopy of the fermentation supernatant particles were studied. The results showed that the particles in the fermentation supernatant were spherical with an average particle size of 570.2nm. The particles mainly concentrated in three ranges: 63.35 ~ 119.22, 262.79 ~ 494.57nm and 1276.86 ~ 2814.55nm. The zeta potential was (-10.72 ± 2.94) mV.
