目的:了解扬中市人群河豚鱼食用相关知识、态度状况,探索河豚鱼食用科学监管方法。方法:采用分层随机抽样方法,对扬中市人群食用河豚鱼的相关知识、态度、行为(KAP)进行调查。结果:扬中市人群河豚鱼的食用率为84.6%,近3年99.5%的人食用的是养殖河豚鱼;人群有78.5%可以区分河豚鱼与普通鱼类,27%能区分常见河豚鱼种类,12%能辨认养殖与野生河豚鱼;70.8%支持食用河豚鱼,普遍认为鱼肉、鱼皮无毒。结论:扬中市人群河豚鱼食用情况较为普遍,多数人掌握了一定的河豚鱼食用知识,但仍有相当一部分人对河豚鱼相关知识缺乏了解或有误解,需进一步加强教育与宣传。
Objective: To understand the knowledge and attitudes of puffer fish consumption in the population of Yangzhong City, and to explore the food science supervision methods of puffer fish. Methods: Stratified random sampling method was used to investigate the knowledge, attitude and behavior (KAP) of eating puffer fish in the population of Yangzhong City. Results: The consumption rate of puffer fish population in Yangzhong City was 84.6%. In the past 3 years, 99.5% of the people consumed the cultured puffer fish; 78.5% of the population could distinguish between puffer fish and common fish, and 27% could distinguish the common puffer fish species. 12% can identify farmed and wild puffer fish; 70.8% support the consumption of puffer fish, and it is generally believed that fish and fish skin are non-toxic. Conclusion: The population of puffer fish is relatively common in Yangzhong City. Most people have a certain knowledge of puffer fish consumption. However, there are still quite a few people who lack knowledge or misunderstanding about the related knowledge of puffer fish and need to further strengthen education and publicity.
