生姜是一种重要的调味蔬菜,具有独特的香气和辣味,许多菜肴都少不了它,除了有去腥去膻的作用外,还有祛寒、发汗、健胃、止吐等医疗功效。生姜作为调味蔬菜,用量虽少,但常年都需要,只有贮藏好,周年供应才有保证。生姜主要产在南方,北方地区除了山东的莱芜、膝县和泰安等地有丰富的栽培和贮藏经验外,其它地方在引进试种中虽获得成功,但由于没有掌握生姜的贮藏特性,常在贮藏中造成烂姜损失,因此这里着重谈一谈北方地区贮好生姜的一些技术问题以供参考。
