:测定了红桔浮皮枯水果的生理生化指标 ,结果表明 :浮皮果的密度为 6 43.0～ 80 0 .0kg/m3,枯水果的密度低于 6 43.0kg/m3。与正常果比较 ,枯水果的总酸含量、果肉水分含量及出汁率明显下降 ,过氧化氢酶的活性明显减弱 ,而呼吸率和乙醇含量明显升高 ,果胶甲酯酶的活性明显增强。浮皮枯水果的若干生理生化指标之间存在显著的相关性 : The physiological and biochemical indexes of red peel fruit were measured.
