:测定了红桔浮皮枯水果的生理生化指标 ,结果表明 :浮皮果的密度为 6 43.0~ 80 0 .0kg/m3,枯水果的密度低于 6 43.0kg/m3。与正常果比较 ,枯水果的总酸含量、果肉水分含量及出汁率明显下降 ,过氧化氢酶的活性明显减弱 ,而呼吸率和乙醇含量明显升高 ,果胶甲酯酶的活性明显增强。浮皮枯水果的若干生理生化指标之间存在显著的相关性
: The physiological and biochemical indexes of red peel fruit were measured. The results showed that the density of floating peel was 6 43.0 ~ 80 0. 0kg / m3, the density of dry fruit was lower than 6 43.0kg / m3. Compared with the normal fruit, the total acid content, the moisture content and the juice yield of the fruit decreased significantly, the activity of catalase decreased significantly, but the respiration rate and ethanol content increased obviously, and the activity of pectin methylesterase increased obviously.
