保健型蔬菜芦笋在国际上有“蔬菜之王”的美誉,芦笋因富含多糖、类黄酮等活性因子而具备显著的抗氧化作用。芦笋表现出较强的抗衰老功效,研究发现,芦笋多糖能有效拮抗衰老小鼠胸腺指数的下降,促进Bcl-2蛋白表达量增加,而Fas蛋白表达水平则明显降低。芦笋抗衰老作用还表现在其提取物能降低果蝇体内脂褐质的含量并抑制脂质过氧化物的生成。小鼠体外抗氧化试验发现,芦笋多糖对羟自由基、超氧阴离子自由基均具较高的清除效率,且高浓度的多糖对体外肝组织的总抗氧化作用起到一定的
