2015年重庆市巴南区食源性致病菌检验及结果分析

目的了解重庆市巴南区销售食品中致病菌污染情况,为预防和控制食源性疾病的发生提供依据。方法根据《食品安全风险监测工作手册》对重庆市巴南区销售食品中沙门菌、副溶血性弧菌等6种致病菌进行检测。结果 215件样品中分离出24株致病菌,总检出率11.16%,其中沙门菌11株、副溶血性弧菌7株、金黄色葡萄球菌4株、蜡样芽胞杆菌2株,未检出霍乱弧菌和单核细胞增生李斯特氏菌。结论重庆市巴南区销售的食品存在一定的食源性致病菌污染,水产品、肉制品属于高风险食品。建议加强食源性致病菌的监测,做好安全预警,从根本上提高食品安全性,有效预防食源性疾病的发生。 Objective To understand the contamination of pathogenic bacteria in foodstuffs sold in Banan District of Chongqing Municipality and provide the basis for preventing and controlling the occurrence of foodborne diseases. Methods Six kinds of pathogens such as Salmonella and Vibrio parahaemolyticus in foodstuffs were detected in Banan District of Chongqing according to “Food Safety Risk Monitoring Manual”. Results Twenty-four pathogenic bacteria were isolated from 215 samples, with a total detection rate of 11.16%. Among them, 11 were Salmonella, 7 were Vibrio parahaemolyticus, 4 were Staphylococcus aureus and 2 were Bacillus cereus. Vibrio cholerae and Listeria monocytogenes. Conclusion The products sold in Banan District of Chongqing City are contaminated by food-borne pathogenic bacteria. Aquatic products and meat products are high-risk foods. It is suggested to strengthen the monitoring of food-borne pathogens, make safety early warning, basically improve food safety and prevent food-borne diseases effectively.
