干酪浓缩了牛奶中的各种成分,具有营养价值高,便于贮运,食用方便等特点,在世界乳制品生产和消费中占有重要地位。中国干酪产销量远低于世界平均水平,成为制约乳业发展的因素之一。本文介绍了干酪生产发展简史,干酪的营养价值,世界干酪生产消费状况;分析了新疆发展干酪生产的有利条件,建议乳品企业审时度势,抓住机遇,投资开发干酪等产品,抢占区内外乳品市场。
Cheese concentrates the various ingredients of milk, with high nutritional value, easy storage and transportation, easy to eat and so on, occupying an important position in the world’s dairy production and consumption. China’s cheese production and sales far below the world average, become a constraint to the development of dairy industry one of the factors. This paper introduces a brief history of the development of cheese production, the nutritional value of cheese, cheese production and consumption in the world; analysis of the favorable conditions for the development of cheese production in Xinjiang, the proposed dairy companies assess the situation, seize the opportunity to invest in the development of cheese and other products to seize the region both inside and outside the dairy market .
