目的了解三明市食品中食源性致病菌污染情况,为制定防控策略提供依据。方法对2005—2015年采集的12类食品1 467份样品按国家有关标准和技术要求进行监测分析。结果 1 467份样品检出致病菌263株,检出率17.9%。检出率较高的为餐饮食品(28.3%)、生畜禽肉(22.8%)、水产品(22.5%)、乳与乳制品(18.9%)、速冻米面制品(17.6%)和熟肉制品(15.7%)。致病菌检出率:沙门菌2.3%(30/1 319)、大肠埃希菌O157:H7 0.2%(1/471)、单核李斯特菌4.9%(46/934)、副溶血弧菌18.7%(29/155)、金黄色葡萄球菌8.8%(78/889)、创伤弧菌6.4%(3/47)、阪崎肠杆菌0.8%(1/119)、蜡样芽胞杆菌30.0%(72/240)、铜绿假单胞菌4.5%(3/66);志贺菌未检出。结论三明市主要消费食品存在食源性致病菌污染,生畜禽肉、水产品、餐饮食品、速冻米面制品和熟肉制品是主要受污染品种。监管部门应加大监管力度,以防止食源性疾病的发生。
Objective To understand the food-borne pathogens contamination in Sanming City and provide the basis for the development of prevention and control strategies. Methods A total of 1 467 samples of 12 kinds of food collected in 2005-2015 were monitored and analyzed according to relevant national standards and technical requirements. Results A total of 263 strains of pathogens were detected in 1 467 samples, the detection rate was 17.9%. The highest detection rates were food and beverage (28.3%), live poultry meat (22.8%), aquatic products (22.5%), milk and dairy products (18.9%), frozen rice products (17.6%) and cooked meat products (15.7%). Pathogenic bacteria detection rate: Salmonella 2.3% (30/1 319), Escherichia coli O157: H7 0.2% (1/471), Listeria monocytogenes 4.9% (46/934), Vibrio parahaemolyticus 18.7% (29/155), Staphylococcus aureus 8.8% (78/889), Vibrio vulnificus 6.4% (3/47), Enterobacter sakazakii 0.8% (1/119), Bacillus cereus 30.0% 72/240), Pseudomonas aeruginosa 4.5% (3/66); Shigella was not detected. Conclusions There are food-borne pathogenic bacteria in the main consuming food in Sanming City. Livestock and poultry meat, aquatic products, catering food, quick frozen rice noodles and cooked meat products are the main contaminated varieties. Regulatory authorities should step up supervision to prevent food-borne diseases.
