目的对重庆市万州区2007年生产加工的蒸馏酒进行卫生质量监测,以了解本产地蒸馏酒卫生质量现状及影响因素,为确定卫生监测重点和国家制定食品卫生标准提供科学依据。方法严格按照国家《全国疾病预防控制机构工作规范》要求和现行《蒸馏酒与配制酒卫生标准》进行采样、检验和评价。结果万州区蒸馏酒的监测结果总合格率为78.95%,以杂醇油超标较为突出,超标率为17.11%;甲醇指标监测超标率为3.95%,氰化物、铅、锰监测合格率均为100%;区级酒厂蒸馏酒监测合格率为88.89%,乡镇企业酒厂蒸馏酒监测合格率为75.86%。结论该区蒸馏酒卫生质量合格率较低,杂醇油超标的是蒸馏酒不合格的主要原因。
Objective To monitor the quality of distilled spirits produced and processed in Wanzhou District of Chongqing in 2007 so as to understand the status quo and influencing factors of hygiene quality of distilled spirits in this producing area and provide scientific basis for determining the key points of health monitoring and the formulation of food hygiene standards in China. Methods Strict sampling, testing and evaluation were conducted in accordance with the requirements of the “National Code of Practice for Disease Control and Prevention” and the existing “Distilled and Prepared Liquor Health Standards”. Results The qualified rate of distilled spirits in Wanzhou District was 78.95%. The exceeding rate of fusel oil exceeded 17.11%. The exceeding rate of methanol index monitoring was 3.95%. The pass rate of cyanide, lead and manganese were all 100 %; District-level winery distilled wine monitoring pass rate of 88.89%, township enterprises wineries distilled wine monitoring pass rate of 75.86%. Conclusion The qualified quality of distilled liquor in this area is low, and the excessive fusel oil is the main reason for the unqualified distilled liquor.
