目的了解西安市集中式餐具消毒公司的消毒效果的现状。为有效开展集中式餐具消毒公司的监督监测提供科学依据。方法2008年对西安市18家集中式餐具消毒公司的餐具进行随机抽样检测。结果集中式餐具消毒公司的餐具玻璃杯、茶杯、汤碗、骨碟、汤勺的大肠菌群合格率差异无统计学意义(P>0.05),合格率为80%。筷子的大肠菌群合格率为60.87%,与其他样品合格率差异有统计学意义(P<0.05)。沙门菌、志贺菌、金黄色葡萄菌合格率为100%。有4个公司检测的样品全部合格,占22%。有17个采样点的检测的样本全部合格,占47%。结论应大力加强集中式餐具消毒公司及餐饮单位的监督监测工作。
Objective To understand the status quo of disinfection effect of centralized tableware disinfection company in Xi’an. To provide a scientific basis for the effective supervision and monitoring of centralized tableware disinfection companies. Methods In 2008, 18 tableware of centralized tableware disinfection company in Xi’an were randomly sampled and tested. Results There was no significant difference in passing rate of coliform bacteria between tableware glasses, cup, soup bowl, bone plate and soup spoon of concentrated tableware disinfection company (P> 0.05). The pass rate was 80%. The passing rate of coliform bacteria in chopsticks was 60.87%, which showed significant difference with other samples (P <0.05). Salmonella, Shigella, Staphylococcus aureus qualified rate of 100%. There are 4 companies testing all the qualified samples, accounting for 22%. All 17 samples tested qualified, accounting for 47%. Conclusion The supervision and monitoring of centralized tableware disinfection companies and catering units should be greatly strengthened.
