目的研究福建海域鲜活海产品中铅、镉含量水平,评估居民的膳食暴露量。方法采集捕捞和养殖环节的未添加任何物质的鲜活海产品196份,用电感耦合等离子体质谱仪测定铅、镉含量。结合福建省居民膳食消费量数据,应用点评估法对居民海产品铅、镉的暴露量进行评估。结果 196份样品中铅、镉超标率分别为0和8.2%。居民膳食中海产品的铅最大摄入量为40.2!g/d,占每日允许最大摄入量(PTDI)的18.8%;海产品镉的最大摄入量为74.8!g/d,占PTDI的125%。结论福建省居民膳食中海产品铅的摄入量安全,镉的摄入存在安全风险。日常膳食要控制双壳类和甲壳类海产品的摄入量及食用频率。
Objective To study the levels of lead and cadmium in fresh seafood in Fujian sea area and evaluate the dietary exposure of residents. Methods A total of 196 fresh seafood samples were collected from fishing and aquaculture sections without any added substances. The contents of lead and cadmium were determined by inductively coupled plasma mass spectrometry. Based on the data of dietary consumption of residents in Fujian Province, this paper evaluates the lead and cadmium exposure of residents’ seafood by using the evaluation method. Results The over-standard rates of lead and cadmium in 196 samples were 0 and 8.2% respectively. The maximum intake of lead in seafood was 40.2 μg / d, accounting for 18.8% of the daily allowable maximum intake (PTDI); the maximum intake of cadmium in seafood was 74.8 μg / d 125%. Conclusions The intakes of lead in seafood in Fujian Province are safe and cadmium intake is a safety risk. Daily diet to control bivalve and crustacean seafood intake and frequency of consumption.
