本文对渤海湾密鳞牡蛎进行了较全面的营养成分分析。结果表明:密鳞牡蛎具有富含牛磺酸(50μmol/g wet wt.)锌、硒的特点;低脂肪、低胆固醇,且含有一定量的高度多不饱和脂肪酸(EPA+DHA占FA总量的20.4%)、无机盐、维生素含量也很丰富。研究结果为开发研制牡蛎保健食品提供了科学依据。
In this paper, the Bohai Bay oysters were more comprehensive nutrition analysis. The results showed that the oyster was rich in taurine (50μmol / g wet wt.)
