目的跟踪监测驻马店市食品中的有害因素,并按照食品类别和污染物种类进行风险评估。方法按照食品卫生检验方法和污染物监测手册,对5 032份食品样品进行200项污染物指标检测。分析近5年来污染物指标的变化和不合格食品的分布情况。结果在5 032份样品中,共检测出不合格样品250份,整体合格率为95.03%。随着食品安全风险监测工作的逐年开展,全面性、系统性和针对性监测正在进一步完善和加强。目前我市的食品安全风险主要来自于两个方面。一是添加剂的滥用问题,包括超剂量添加和超范围使用;二是食品生产链上存在的污染问题,包括包装容器中有害物质的迁移,以及由于储存不当,食物自身产生的有害物质。结论食品安全关乎民生,唯有科学监管,积极引导,常抓不懈,才能将我市的食品安全风险程度降到最低。
Objective To monitor and monitor the harmful ingredients in food in Zhumadian City and conduct risk assessment according to the type of food and the type of pollutants. Methods According to the food hygiene inspection method and the pollutant monitoring manual, 200 pollutant indexes were tested on 5 032 food samples. At present, the city’s food safety risks mainly come from two aspects. First, the abuse of additives, including overdosing and over-range use of the second is the pollution problems in the food production chain, including the migration of harmful substances in packaging containers, and due to improper storage, the food itself produces harmful substances. Conclusion Food safety is about people’s livelihood. Only through scientific supervision, active guidance and constant efforts can food safety risk in our city be kept to a minimum.
