长期以来,职业教育教学主要依靠教室、模拟技能实训室进行教授、仿真模拟技能训练,人才培养虽做到了知晓和会做,却难以满足企业课堂直通岗位能手级人才的迫切需求,由此引发了对课程教学方式上的深度思考。本文以《餐饮服务与管理》课程为研究对象,在总结该课程特点的基础上,针对该课程在教授时需要达到的实训教学效果,指出了其依托经营型实训基地进行模块化教学的具体实践探索过程,提出对策。
