碳氮比(C/N)是指食用菌培养料中碳源和氮源适当浓度的比值。一般认为在营养生长阶段碳氮比以20:1为宜;子实体生长发有期碳氮比以30—40:1 为好。食用菌种类及培养材料不同,对碳氮比的要求也不同。如蘑菇在菌丝生长阶段堆制原料时的碳氮比为 33:1;子实体分化和发育期的最适大氮比为 17:1;草菇的碳氮比为40—60:1;香菇本屑培养料为 C / N ratio refers to the ratio of appropriate concentration of carbon source and nitrogen source in the edible fungus culture material.
