对林地遮阳网栽培侧耳、红侧耳、金顶侧耳3种侧耳的常规营养成分、氨基酸和矿质元素进行分析比较,旨在为更好地开发利用林地食用菌资源以及为进行深加工提供参考。采用常规营养成分测定水分、粗纤维、还原糖、粗多糖、粗脂肪、粗蛋白质含量;用日立L 8900型氨基酸自动分析仪测定氨基酸,测定出3种侧耳中16种氨基酸;用原子吸收方法对这3种侧耳中所含的矿质元素铁、锰、铜、锌、磷、钠、钾、钙、镁的含量进行测定。结果表明,3种侧耳在林地遮阳网中生长下产生很高的营养成分,均是高蛋白、高纤维、低脂肪、高钾低钠的食用菌,营养价值较好,食用口感良好。通过对试验数据的方差分析,发现3种侧耳在常规营养成分、氨基酸和矿质元素之间差异性不显著。
The comparison of conventional nutrients, amino acids and mineral elements of three kinds of Pleurotus ostreatus, Pleurotus citrinopileatus and Pleurotus ostreatus on forestland shading net is aimed to provide reference for better development and utilization of forest edible fungus resources and further processing. The amino acids were determined by the automatic analyzer of Hitachi L 8900 and the 16 kinds of amino acids in three kinds of Pleurotus ostreatus were determined by routine nutrient analysis. The content of water, crude fiber, reducing sugar, crude polysaccharide, crude fat, The contents of the mineral elements iron, manganese, copper, zinc, phosphorus, sodium, potassium, calcium and magnesium contained in these three kinds of ear were measured. The results showed that the three kinds of Pleurotus ostreatus produced high nutrition in the shade net of forest land. They were all high edible fungi with high protein, high fiber, low fat and high potassium and low sodium. They had good nutritional value and good taste. Through the analysis of variance of the experimental data, we found that the three kinds of Pleurotus ostreatus showed no significant difference among the conventional nutrients, amino acids and mineral elements.
