大豆是重要蛋白质、脂肪资源。原产不同纬度的大豆品种种子化学成分含量差异,与人为选择和自然选择有关,并有较明显的生态地理分布规律。 西泻高一曾对我国东北一些地区大豆的化学成分含量地区间差异做了研究,丁振麟曾以几个品种在我国不同纬度(25°03′—40°)的8个地点进行试验,得出大豆种子蛋白质含量与种植地点纬度呈负相关、脂肪含量呈正相关的结论。
