[目的]了解揭阳市食用植物油的卫生情况,为卫生监督管理提供准确依据。[方法]食用植物油按照GB/T5009.37-2003食用植物油卫生标准方法进行检测,按照GB 2716-2005食用植物油卫生标准进行判定。[结果]检验298份食用植物油样本,合格292份,合格率97.99%。各年的合格率分别为97.26%、98.39%、96.92%、98.15%、100.00%,不同年份植物油合格率的差异无统计学意义(P>0.05)。砷、溶剂残留、黄曲霉毒素均合格;酸价和过氧化值分别超标5份和2份。不同单位植物油合格率的差异有统计学意义(P<0.01),不同种类植物油合格率的差异有统计学意义(P<0.01)。[结论]影响食用植物油卫生质量多为酸价和过氧化物值得关注,重点应加强食用植物油的卫生监测监督。
[Objective] To understand the hygienic condition of edible vegetable oil in Jieyang and provide an accurate basis for health supervision and management. [Method] The edible vegetable oil was tested according to the hygienic standard of GB / T5009.37-2003 edible vegetable oil and judged according to the hygienic standard of edible vegetable oil of GB 2716-2005. [Result] 298 samples of edible vegetable oil were tested, with a pass rate of 97.99%. The passing rates of each year were 97.26%, 98.39%, 96.92%, 98.15% and 100.00%, respectively. There was no significant difference in the passing rate of vegetable oil in different years (P> 0.05). Arsenic, solvent residues, aflatoxin were qualified; acid value and peroxide value exceeded 5 and 2 copies respectively. The differences of the qualified rates of vegetable oil in different units were statistically significant (P <0.01), and the differences of the qualified rates of different types of vegetable oils were statistically significant (P <0.01). [Conclusion] It is noteworthy to affect the hygienic quality of edible vegetable oil mostly as acid value and peroxides. Emphasis should be placed on monitoring and supervision of edible vegetable oil health.
