以磨盘柿为试材,以直接冰温贮藏为对照,研究了冰温贮藏前低温驯化对磨盘柿硬度和软化相关物质代谢的影响。结果表明:与对照相比,低温驯化可有效降低乙烯释放速率的上升,抑制多聚半乳糖醛酸酶(PG)活性、纤维素酶(CX)活性、淀粉酶活性的上升和可溶性果胶含量的升高,保持果实硬度。该研究表明,磨盘柿经低温驯化结合冰温贮藏的效果优于直接冰温贮藏的效果。
The effect of low temperature domestication on the hardness and softening-related substance metabolism of Mopan persimmon persimmon was studied with direct storage at low temperature as control.
