目的结合2010~2012年甘肃省14个地市随机抽取的粮食类薯类制品中铝含量和国家居民营养与健康状况监测的食物摄入量相关数据,对甘肃粮食类薯类制品中铝的暴露量进行风险评估。方法采用点评估方法,利用中国居民膳食营养与健康状况调查报告的已有数据,将食物分为米及米制品、面及面制品、其他谷类、豆制品、薯类以及淀粉共六大类,区域划分为城市和农村,将整个人群按年龄、性别分为10组,对各组的食品摄入量结合铝检测的平均值、中位数以及第95百分位数进行分析评估。结果从全省总体(安全限值均值,MOS)来看,2010~2012年粮食类薯类制品中人群铝暴露量的MOS值为1.4~3.9。结论甘肃省粮食类薯类制品中铝的暴露量较高。铝含量偏高食品存在安全风险,尤其在2~7岁年龄段人群。
OBJECTIVE: To analyze the relationship between aluminum content in food-based potato products randomly sampled from 14 cities in Gansu and the food intake monitored by nutrition and health status of residents in Gansu from 2010 to 2012, Quantitative risk assessment. Methods The method of point assessment was used to classify food into six major categories: rice and rice products, flour and noodles, other cereals, soy products, potato and starch by using the existing data of the survey report on dietary nutrition and health of Chinese residents. The region is divided into urban and rural areas, and the entire population is divided into 10 groups by age and sex. The food intake of each group is analyzed and evaluated according to the average, the median and the 95th percentile of aluminum detection. Results From the overall safety of the province (MOS, mean), the MOS value of aluminum exposure in grain-type potato products from 2010 to 2012 was 1.4-3.9. Conclusion The exposure to aluminum in grain-type potato products in Gansu province is higher. High aluminum content of food safety risks, especially in 2 to 7 age group.
