本文是作者在1975—1982年期间,对不同谷物淀粉组份某些特性的研究结果。内容有:①稻米籽粒中直链淀粉含量随品种类型有明显差异。籼稻型品种含量较高,糯稻几乎不含直链淀粉,粳稻介于二者之间。②谷物淀粉中,直链淀粉—碘复合物最大吸收波长为650-—660nm。而支链淀粉—碘复合物依分枝程度而异,蜡质型波长为530—540nm,非蜡质型波长为590—600nm。③两种淀粉碘结合量随作物类型,品种不同有明显差异。④两种淀粉组份比旋度在作物类型,品种间差异不显著,仅在组份间有明显差异。
This is the author’s study of some of the starch components of different grains during 1975-1982. Content: ① rice grain amylose content with the type of significant differences. Higher indica rice varieties, glutinous rice almost no amylose, japonica between the two. ② cereal starch, amylose - iodine complex maximum absorption wavelength of 650 - 660nm. The amylopectin-iodine complex, however, varies depending on the degree of branching, with waxy wavelengths of 530-540 nm and non-waxy wavelengths of 590-600 nm. ③ The amount of iodine binding of two kinds of starch with the type of crop, there are significant differences in different species. ④ The specific rotation of the two starch components in the crop type, the difference was not significant, only significant differences between the components.
