目的了解和探讨“五常法”与HACCP在餐饮食品安全管理中的实践应用。方法介绍“五常法”与HACCP在我国餐饮食品安全管理中应用的基本原理、实施步骤,应用现状及取得的社会经济效益;对“五常法”与HACCP在餐饮食品安全管理中结合运用进行了讨论。结果餐饮企业建立“五常法”与HACCP食品安全管理体系,企业食品安全保障水平明显提升。结论食品安全监管部门应积极指导和帮助餐饮企业建立先进的食品安全管理体系。
Objective To understand and discuss the practical application of “Five Methods” and HACCP in food and beverage safety management. Methods introduce the basic principles, implementation steps, application status and social and economic benefits of HACCP and HACCP applied in food and food safety management in our country.
