自国家颁布《绿色饭店标准》之后,“绿色饭店”的创建已全面铺开,而“绿色厨房”的建设未得到充分重视。该文通过对当前酒店厨房非绿色现象的分析,指出了“绿色厨房”建设的紧迫性,并从树立绿色理念、制定考核标准、建立监控机制和运用绿色科技等方面提出对策。
Since the promulgation of the “Green Hotel Standard” by the State, the establishment of “Green Hotel” has been fully carried out and the construction of “Green Kitchen” has not been given enough attention. This article points out the urgency of building “green kitchen” through the analysis of non - green phenomenon in the current hotel kitchen, and puts forward countermeasures from the aspects of establishing green concept, establishing evaluation standard, establishing monitoring mechanism and applying green technology.
