八角又称茴香、八角茴香、大料和大茴香,为常用调料。八角能除肉中臭气,使之重新添香,故又名茴香。八角有甜味和强烈的芳香气味,香气来自其中挥发性的茴香醛。八角主要用于煮、炸、卤、酱及烧等烹调加工中,常在制作牛肉、兔肉的菜肴中加入,可除腥膻等异味,增添芳香气味,并可调剂口味,增进食欲。炖肉时,肉下锅就放入八角,它的香味可充分水解溶入肉内,使肉味更加醇香。
