黄豆是我国人民普遍喜食的豆类食物。据测定,黄豆含蛋白质高达40%,素有“植物肉”的美誉。黄豆所含脂肪,不仅含不饱和脂肪酸多,易被人体消化吸收,而且还含有较为丰富的磷脂,对人体生长发育及神经活动具有积极作用。此外,黄豆还含有较多的矿物质、微量元素、维生素等,均为人体生长发育所必需。近年来,营养学家研究发现,黄豆与其它食品科学搭配食用,其营养保健价值更会大大提高。
