(一) 上海糕点原有京、广,苏、潮,宁和西点等11个帮式,品种达1000多种,质优味美,畅销国内外,深受顾客欢迎,尤以传统特色糕点烩炙人口。近年由于糖糕行业受到原辅料成本上升,产品销价控制和分配平均主义等影响,糕点生产逐趋减少。目前市场上能见到的只有60多种,许多深受群众喜爱的名特产品如薄脆饼、状元糕、伦教糕、花生酥、异味熏鱼等都没有供应。西区老大房原有传统食品40个品种,现在全部停产,名店无“名点”。上海食品厂1984年有名特产品24种,现在只剩下3种。传统特色产品的制作技艺已濒临失传。
