以酿酒专用为育种目标,从广东桑杂交组合后代筛选果多果大,单株经系统选育及酿酒试验,初步选育出酿酒果桑品种粤椹74。该品种长势旺,果大果多,口感好,品质佳。盛产期座果率95.3~98.7%,平均单芽座果数4.7~5.3粒/芽,平均单果重4.6~4.7g,米条产果量476.2~548.0g。出汁率73.0~81.5%,鲜榨果汁可溶性固形物7.5~12.6%,总糖64.6g/L,总酸7.90g/L,糖酸比8.2,花青素1395.68mg/L。原汁发酵成酒乙醇10.5%,总酸6.78g/L,总挥发酯0.093g/L,花青素369.38mg/L,pH3.54。
Taking brewing only as the breeding target, the screening fruit from Guangdong hybrid cross was more fruitful, and the single plant was bred by systematic breeding and winemaking test. The variety is flourishing, with large fruit, good taste and good quality. Fruit yield was 95.3-98.7% in the high yielding period, the average number of fruit buds per single fruit was 4.7-5.3 grains per shoot, the average fruit weight was 4.6-4.7g, and the yield of rice was 476.2-548.0g. The juice yield was 73.0-81.5%, soluble solids of freshly squeezed juice 7.5-12.6%, total sugar 64.6g / L, total acid 7.90g / L, sugar / acid ratio 8.2, anthocyanin 1395.68mg / L. Raw fermentation of alcohol 10.5%, total acid 6.78g / L, the total volatile esters 0.093g / L, anthocyanin 369.38mg / L, pH3.54.
